Mondays are hard. Especially in Lent, Mondays are hard. Fortunately for me, I’m home-schooled so even though its Monday things are not so bad. Unfortunately for me, this home-school doesn’t do public holidays. So…no President’s Day off for us. Oh well.
Smoothies are good. Smoothies help the weekend hangover. This smoothie is really good. One of my brothers originally invented it, but he called it “Tropical Smoothie”. But the only thing really tropical in here is the pineapple. So…we’re gonna call it Springtime Smoothie instead. Cool? Cool.
1. c. pineapple juice
1/4 c. pineapple chunks
1 T. lemon juice (fresh is preferable, but use what you’ve got)
1/2 orange (or a whole orange if you’ve got a particularly skrinky one)
3/4 c. strawberries
3 ice cubes
Blend all ingredients in a blender. YIELD: 2 small-ish servings or one big serving
