The best time for making peanut butter cookies in this house is right after the organic peanut butter has been “doctored”. This means simply adding sweetener and salt to the bland, oily and separated store-bought all-natural peanut butter. This is the best time because all of that lovely peanut butter that sticks to the sides of the mixing bowl can be used up when added to the cookie dough. Pretty genius, right?

What makes a peanut butter cookie special? If you answered chocolate, then you are my favorite 🙂 But around here, peanut butter cookies are made primarily for the patriarch, and he likes them peanut butter, peanuts, peanut-butter chips. This isn’t how these are made, however, this is just a straight-up, simple, unadorned peanut butter cookie. Is it flashy? no. Is it difficult? no. Is it fabulous? absolutely.

As I’ve already said, making sugar-less things for their own sake is the goal here. These cookies aren’t simply “well, that’s pretty good considering there isn’t any crud in them.” No. These are “wow! that’s a good cookie.”

What are the secrets? molasses and browned butter. Molasses apparently works wonders counter-acting the usual after-taste of the non-sugar sweetener, and browned butter…well, what’s not awesome about that?

 Not that I’m suggesting you shouldn’t add chocolate…how could that be bad?

Winner Peanut Butter Cookies

Ingredients:

2/3 c. peanut butter (organic is really good)

¾ c. butter (1 and ½ stick)

1 ½ c. flour

½ t. baking soda

½ t. baking powder

½ t. stevia (or ½ c. sugar)

½ c. honey

1 egg

½ t. vanilla

½ t. molasses

Directions:

Preheat oven o 375 degrees F.

In a small saucepan, brown 1 stick of the butter. Let cool completely.

In a medium bowl, combine the flour, baking soda, and baking powder. Set aside.

With an electric mixer, beat the remaining butter , peanut butter, stevia or sugar, and honey. Add molasses, vanilla, and egg. Add dry ingredients.

Drop by tablespoonfuls onto a baking sheet lined with wax paper. Or roll into balls and press crosswise with a fork. Bake for 10-11 minutes. Transfer to cooling racks. Enjoy warm or cooled!
