Easter Coconut Macaroon Nests

 

Coconut Macaroon Nests (4)Yeah. It’s totally too late to make these for Easter…probably. BUT! They are pretty flipping awesome. I was so stoked at how they turned out, and even better was the fact that the chocolate coating on the bottom covered up some of the slightly overcooked (read: burned) macaroon bottoms. Yeah…smoke alarms going off, freaking out…it’s all good, turn on the vent fan and open the door. We’re okay.

So. Here’s how this works. Find a totally awesome coconut macaroon recipe like this one, start it going. When it’s time to bake them, use a large ice cream scoop and then use a smaller one to make a spherical indentation on top of the macaroon. Press it in there, you want a big nest. You may need to have a glass of hot water on hand to dip the small ice cream scoop in, so that it doesn’t stick. While those are baking, melt some white and dark chocolate. Let them cool a little bit. Break out the jelly beans. You know you have jelly beans. It’s Easter!

When the macaroons are cool, dip the bottoms in the dark chocolate, and fill the tops with white chocolate. Stick in the jelly beans. Let the chocolates set. Enjoy!!!
