 Well, it’s hot. It’s pretty much summer, but it’s only going to get hotter from here on out. Cakes and cookies are out, ice cream, frozen desserts and no-bake desserts are very much in. But who wants to turn on the stove to make ice cream? Don’t everybody jump up at once, now. That’s what I thought.

Luckily, with this recipe, all you need is a blender. NO COOKING!!! The secret ingredient is avocado!! Green in your cream? Heck yes! What are you waiting for?

Oh…for the ice cream to freeze. Okay, that’s cool. Well, I guess it isn’t cool yet. Ok, I’m done with the bad puns. Just make some some fabulous fudge ice cream already. P.S it’s healthy! *gasp*

P.P.S it makes a great base for milkshakes not to mention frappés!

Fudgy Sorbet

1 1/3 c. coconut milk

1/2 c. agave nectar

2/3 c. cocoa powder

8 Medjool dates (any sort of dried date you can find is fine)

1 large ripe avocado, peeled and pitted

1 c. almond or regular milk

2 c. ice cubes


Place ingredients in blender. Blend until smooth. Transfer to a freezer-safe container and freeze overnight.

Note: to make popsicles, make 1/2 recipe. To make ready-serve ice cream, substitute 2 more cups of ice cubes for the milk.
