I’m back! With cookies! Honestly, who doesn’t like cookies? I don’t think I can trust you if you don’t like cookies… your opinions are highly questionable.
Oversized, over-chocolate’d, over-awesome cookies. Cookies that, to me, just say “Friday Night: you’ve basically finished your school and you owned that Latin test. Friday Night: you’re going on a 10-day vacation this upcoming week and you just made $60. Friday Night…” well, you get the idea.
Anyway, I hope you try these fabulous fourteen mouthful whompers. Just be careful and call 911 if necessary. Not everyone can handle the chocolate 😀 Seriously though, I was maxed out at one cookie, and I LOVE chocolate.
It’s Friday night so let’s make some ginormous cookies and sprinkle them with pink salt because we can!!!
Death By Chocolate Cookies
adapted from Sally’s Baking Addiction
- 2. c all-purpose flour
- ¾ c. unsweetened cocoa powder
- 3 t. baking soda
- 2 t. salt
- 16 Tablespoons unsalted butter, softened to room temperature
- 1 c. granulated sugar
- 1 c. Tablespoons light brown sugar (or dark brown)
- 2 eggs
- 2 t. vanilla extract
- 2 c. semi-sweet chocolate chips ,
Preheat oven to 350F degrees. Line a cookie sheet with parchment paper or silicone baking mat. Set aside.
In a medium size bowl, beat the softened butter and sugars together with a mixer. Beat in the egg and vanilla.
In a separate bowl, mix the flour, cocoa powder, baking soda, and salt. Pour the dry ingredients into the wet ingredients and mix to combine. Fold in chocolate chips.
Place the dough in the center of the baking sheet and mold into a tall ball using a spoon (see picture above). Dot the top of the cookie with 1 Tablespoon of chocolate chips (if desired). Sprinkle with salt. Bake for 10-12 minutes, or up to 16 minutes. The cookie will appear very soft, but will firm up as it cools. Allow to cool completely on baking sheet.
