Strawberries are a lovely fruit. Fresh strawberries from your own garden are the very best. But a chocolate-covered strawberry is just phenomenal.
Chocolate-covered strawberries symbolize celebration. A party, an anniversary, valentine’s day. Some very special occasion.
I think every day of summer should be a celebration. Summer is so fleeting, it’s important to make the most of it while it’s here. Time passes fast enough, heaven knows. But in summer, with no school, no work, and no worries, what more reason could there be to celebrate? Except maybe the fact that these pops are actually healthy. Partaaaayy!!
Chocolate-covered Strawberry Pops
1 1/2 c. almond milk
1 c. water
3 1/2 c. frozen strawberries
2 T. agave nectar
1 1/2 c. (12 oz) chocolate chips
6 T. (3 oz) coconut oil
In a blender, whiz together almond milk, water, frozen strawberries, and agave. Pour into popsicle molds and freeze until firm.
Meanwhile, melt together (I did in a microwave) chocolate chips and coconut oil. Dip frozen pops in chocolate, let set and store in freeezer.
