I’m a big fan of recipes with a short ingredient list. Not only because these recipes are inherently easy, but because they are usually healthy and simple.
My last recipe post was popsicles, I know, but bear with me. These fudgesicles are extra-special because they are free of sugar and dairy. Better still, they taste amazing and chocolatey.
Not too sweet, they are a perfect treat for chocoholics or anyone looking for something cold and delicious (not to mention HEALTHY) to whip up for dessert. Honestly, it’s less than 10 minutes to put together, although you do have to endure the freezing time. First world problems, c’mon. Here’s to the rest of summer and it’s sticky hotness, made enjoyable with frozen treats.
1/2 c. (4 oz) coconut oil, melted
7 T. (3.5 oz) maple syrup
1/3 c. (2.4 oz) cocoa powder
1 can (13 oz) full-fat coconut milk
Firstly, melt your coconut oil in a microwave-safe bowl, then whisk in that all-natural sweetener (maple syrup) and your deliciously dark cocoa powder. Whisk into the coconut milk. Okay, now the hard part. Pour mixture into popsicle molds and freeze until firm. Rejoice in frosty healthy indulgence.
