Confession : I am not a cake person. Pass the brownies and/or cookies please.

THAT being said, cakes just say celebration. I like them occasionally, as in, semi-annually. You think I’m kidding: I’m not.

Therefore cake doughnuts are not usually what I’d go for, in my dreams I make these and these doughnuts. In reality though, baked doughnuts are a big thing. Healthier and easier than fried doughnuts (esp. when made with gluten free flour, date sugar, and yogurt!), lots of fun to frost and decorate, and of course, yummy.

I’d almost never choose plain cake over chocolate cake, but again, it’s something that’s just special. For Friday. And I toasted the milk powder, to imitate brown butter so they’re kinda like these. But not really.

So now that I’ve just explained to you how I would never make anything like this on purpose, you need to, of course, try it. I encourage you to pick any frosting recipe at all you want and be generous with the sprinkles. The doughnuts are healthy enough to compensate. You’re welcome.

Baked Doughnuts

adapted from Back for Seconds

Ingredients:

1 c. all purpose gluten-free flour

1/4 c. dry milk powder, toasted

1/2 c. date sugar

1 1/2 t. baking powder

1/2 t. baking soda

2 eggs

2 T. (1 oz.) coconut oil, melted

1 c. plain yogurt

1 1/2 t. vanilla extract

Cider Glaze:

1/4 c. date sugar

1/4 c. apple cider

2 T. coconut oil, melted

Chocolate Ganache:

1 c. semi-sweet chocolate chips

3/4 c. heavy cream

Directions:

Preheat oven to 350 degrees F. Grease your donut pan.

In a medium bowl sift flour, milk powder, date sugar, baking powder, and baking soda together.

In another bowl whisk together the egg, coconut oil, yogurt, and vanilla. Stir the dry into the wet, and mix just until combined.

Fill donut pan holes 2/3 of the way full and bake for 8-9 minutes, or until a toothpick inserted comes out clean (mostly.)

 

Heat together apple cider, date sugar, and coconut oil in a small saucepan until simmering. In a high-speed blender or food processor, blend until very very smooth. Pour over donuts.

Heat cream to just under boiling, pour over chocolate chips. Let sit for 5 minutes, whisk until smooth. Slather over donuts.

Sprinkle as desired.
