Chocolate Pecan Coffee Cake

INGREDIENTS:

chocolate pecan filling and topping:

  • ½ coconut sugar or sucant
  • ½ pecans
  • 1 teaspoon cinnamon
  • 2 oz. dark chocolate, chopped
  • ¼ all purpose flour (can sub gluten free flour)
  • ¼ unsweetened cocoa powder
  • 4 T. butter, cold

cake:

  • 2 s all purpose flour(can sub gluten free flour)
  • 1 t. baking powder
  • ½ t. baking soda
  • ¼ t. salt
  • 1  1/4 stick (10 tablespoons) butter
  • 1 coconut sugar or sucant
  • 2 large eggs
  • 2 t. vanilla extract
  • 3/4 c. yogurt
  • 1/2 buttermilk

DIRECTIONS:

chocolate pecan filling and topping:

  1. pulse coconut sugar, pecans and cinnamon in food processor until coarsely chopped. Transfer ¾ of mixture to small bowl, stir in chopped chocolate (for filling), set aside. To leftover mixture in food processor pulse flour, cocoa powder and butter and until mixture is crumbly (for topping).

For the cake:

  1. Preheat oven to 325°F. Grease a 9x9x2 square pan, or a medium skillet.
  2. Sift flour, baking powder, baking soda and salt in medium bowl and set aside. Beat butter at medium-high speed in mixing bowl until creamy. Gradually add coconut sugar and beat at high speed until well blended. In a separate bowl, whisk together eggs, vanilla, yogurt, and buttermilk. Beat about 1/2 of this wet mixture into the butter mixture. Add 1/2 of the flour mixture, then remaining wet mixture. Mix in the remaining flour until combined.
  3. Scrape half of batter into prepared pan and smooth top. Sprinkle with filling. Scrape remaining batter over filling and smooth top. Sprinkle with topping. Bake 50 to 60 minutes or until toothpick inserted into center of cake comes out clean or with just a few crumbs. Let cake cool in pan set on wire rack for 10 minutes.
